Processing process and installation for flatfish processing The present invention relates to a processing process capable of extracting and removing both fins and smaller bones located between the flatfish's backbone and the outermost and fattest portions of the flatfish closest to the side fins so that only the backbone remains. The stripper (4) is shown in FIG. 2 also mounted on the mounting plate, so that it is located at the bottom of the circumference of the drive belt (3) midway between the wheel washers (2 and 5), and so that the inside of the drive belt (3) slides in full width below the underside of the scraper ( 4) arm (10). A processing table (9) is arranged so that a flatfish (11) can be placed whose fin (7) is brought between the drive belt and the wheel disc rim (12). On an installation according to the invention, a fish processing table (9) is mounted so that the drive belt (3) runs forward / left longitudinally along the side of the processing table (9). The two wheel washers and the scraper (2) on the installation (1) in Figs. 2 is made of stainless steel, but may also be of other suitable material. The drive belt is a belt in a suitable non-elastic material e.g. a chain in which case the wheel washer has teeth. In the example, the radius of the wheel discs is approx. 100 mm and rim width approx. 10 mm, while the length of the drive belt / chain is approx. 900 mm with a width / diameter of approx. 9 mm, but all suitable lengths can be used.
